Even though I knew it was a bad idea, I ate a pancake today.
Fresh, piping hot, buttermilk pancakes are the best, aren’t they?!
Difficult to resist when you are making them for the kids….I knew I should have filled up on fruit before I got started! And even though the mix had been sitting in the fridge since Monday, and had lost some of its levening, I didn’t want it to go to waste. So I couldn’t help myself…I made one for myself anyway, ignoring the nagging thought in my head that said I would regret it later.
If it’s any consolation, I did pack it full of enormous, deliciously sweet blueberries. Hopefully their anti-oxidant power will outweigh the terrible effect of flour and sugar on my delicate stomach.
And of course, I ate the whole thing!
